Comfort food, that which brings nostalgic memories of a happy and satisfied childhood. Good Sinigang in all variants, Chicken Tinola and Sauteed Squid with Calamansi... each time I have them today, gives me a sense of warm comfort, well being and contentment . Sinigang and Tinola, are common fare in everyone's table but I have never had my squid in anybody else's. Let me share my simple joy.
1/2 kilo squid, cleaned, ink reserved, cut into 1" pieces if big.
1/2 head garlic, minced
1 small onion, minced
1 tomato, diced
juice of 10 pieces calamansi
salt and pepper to taste
Saute garlic, onion and tomato in about 2 tablespoons oil. Add squid then juice of calamansi. Season with salt and pepper to taste. Squid should only be cooked for a few minutes or else they become tough and rubbery.
So simple yet so comforting ... at least for me. Thoughts of the squid...memories of childhood!
